There was no interaction. The stories are bogus, as Ken stated.
You can probably find historical evidence of specific U-Boat-related events like bodies washing up on shore and airplane crashes. You might be able to discover British records of the propaganda used to impact the Irish mindset. But a documentary based on second-hand recollections, knowing that even many first-hand recollections are flawed or outright fancy, is a work of fiction.
The historical records of spies transported by U-Boats may be of interest to you, but I'm sure that the U-Boats remained well off-shore for their safety. The closest actual approach to Ireland was probably my great-uncle's U-Boat on 04 October 1939 - approximately 50 yards - when dropping off 28 Greek sailors in Dingle.
