There are many circumstances a U-boat commander would or would not face if his boat was under attack..? It also depends on the situation for the commander too decide on the best possible tactic for his boat & for his crew...?
If a U-boat came under attack for example by a destroyer, & if I was the Commander I would 'crash-dive' the boat and change course to keep the enemy guessing on the U-boat's position. The Commander would NOT run too the deepest point at this stage, but rather come up too periscope depth for a possible torpedo attack on the enemy ship(s) who is hunting for him.
If the torpedo attack has fail, I would go for silent-running to reserved the batteries and go deep as possible to avoid a D/C attack and avoid a zig-zag, in my opinion.
A U-boat would not stay on the surface to long if under attack. It would be much
better & wiser to crash-dive the boat and get out of the danger zone. (if the boat is not too much damaged) of course.!
