If thermal layers in the Atlantic were indeed 200m deep, it's not like you were going to reach them during your "normal" dives.
And, with the tap, I suppose measuring the temperature of the water is not quite easy. Water starts exchanging heat with the inside medium of the sub the moment it's drained from the tap. And how quick did thermometers of the time give an accurate reading?
With regards to Doenitz, it's certain he made some mistakes. But it's hard to put us in his shoes, after all we've read about his war.
